Description
Deep garnet in colour. Elegant nose with hints of vanilla and white pepper. Dark berry, spicy and pepper notes on the palate with coriander laced together with subtle smoked bacon characters. Drink now or mature for further complexity.
Vinification:
Shiraz grapes were harvested in the cool early morning at 21.2%C2%B0B, gently crushed and pressed to a low 1.4 bars of pressure. The juice was left to settle for two days before fermentation. Fermentation occurred over a 9 day period and wine was left on the lees for 3 months before filtration and bottling.

Density: 4000 vines per hectare
Yield: 5.8 tons per hectare
Soil: The only Shiraz vineyard on Les Montagnes finally achieved the desired
balance to produce premium quality grapes. Well balanced growth delivers even ripeness, beautiful structure and the desired phenolic ripeness to produce this premium wine.
